Muffins & Cookies seem to be my go to. They are simple and easy to put in lunches and it's pretty quick to grab a muffin. Here are my favorite recipe for this week!

I used:
- 2 1/2 Cups Old Fashioned Oats
- 1 Cup Vanilla Greek Yogurs
- 2 Eggs
- 1 1/2 tsp Baking Powder
- 1/2 tsp Baking soda
- 1 1/2 cups diced Strawberries
- Preheat oven to 400 degrees.
- Place all ingredients except the strawberries.
- Pulse until oats are smooth
- Pour into a bowl and stir in strawberries
- Fill Muffin cups (foil work best)
- Bake 20-25 minutes or until toothpick comes out clean
Keep these in an airtight container in the fridge. They will go fast!
What I love about this recipe is that it's a healthy version and yet it still tastes sweet because of the natural sweetness of the strawberries.
