Strawberry Shortcake Surprise

Well, it's 1/2 way thru the first FULL week of school in our house.....It's an adjustment for Mom's and Dad's as well as the kids. I'm settling into a routine now and i'm also finding with the cooler weather, there's a whole lotta baking going on! :)

Muffins & Cookies seem to be my go to. They are simple and easy to put in lunches and it's pretty quick to grab a muffin. Here are my favorite recipe for this week!

I used: 

  • 2 1/2 Cups Old Fashioned Oats
  • 1 Cup Vanilla Greek Yogurs
  • 2 Eggs
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Baking soda
  • 1 1/2 cups diced Strawberries


Process:

  1. Preheat oven to 400 degrees. 
  2. Place all ingredients except the strawberries. 
  3. Pulse until oats are smooth
  4. Pour into a bowl and stir in strawberries
  5. Fill Muffin cups (foil work best) 
  6. Bake 20-25 minutes or until toothpick comes out clean

Keep these in an airtight container in the fridge. They will go fast!

What I love about this recipe is that it's a healthy version and yet it still tastes sweet because of the natural sweetness of the strawberries.
